Dried Catfish Steak

River Catfish (Heterobranchus longifilis)

Yoruba: Eja Aro · Igbo: Azụ Okpo · Hausa: Tarwada · Ghana: Adwene

The one you grew up on. Thick, meaty steaks of wild river catfish - never farmed - freshly caught from the Lekki Lagoon in Lagos, carefully cleaned and lightly seasoned with chilli, onion and edible salt, then slow-dried over a charcoal-fired kiln until the flavour deepens into something unforgettable. One taste and you are back at your mother’s table.

How to enjoy: Simply soak in water to rehydrate, then add towards the end of cooking - drop into your egusi, ogbono, efo riro, okra or any of your native soups, and let it transform the entire dish. Also perfect in stews and your native rice.
